I’ve been very impressed with Sparkfun’s Thing Plus microcontrollers.

These have an Xtensa® dual-core 32-bit LX6 which is on the list of supported MicroEJ platforms. Has anyone tried MicroEJ on one of these? I’d be very interested in being able to write Java for this platform.

We do not specifically provide a MICROEJ VEE example for this board, we however have the ESP32 MICROEJ architecture available publicly: Index of /modules/com/microej/architecture/ESP32. With this architecture and the platform developer guide you can easily do the port yourself on this board.
